Ingredients for Broccoli Soup:

500gr broccoli (approximately 1lb – fresh or frozen)1 medium size potato
1 medium size onion (preferably sweet onion)
2 cups of milk (preferably whole milk)
2 tablespoons butter
For seasoning:
Salt, red and black pepper


In a medium saucepan bring together the chopped broccoli, peeled and diced potato and onion. Add water to barely cover your ingredients in the saucepan, bring to a boil, reduce heat and boil until potatoes tender. Still on the heat, use a stick blender and puree the soup right in the saucepan. While continuously stirring add milk, butter and seasonings, again bring them to boil, after few minutes turn the heat off. Your soup is ready for serving.
