1 cup red lentil
½ cup fine bulgur¾ cup olive oil
1 medium size onion
Green onion, parsley, mint and other preferred greens
1 tablespoon pepper paste
1 tablespoon tomato paste
Cumin, red paper flakes, salt
Romaine lettuce to serve with
Wash and drain the red lentils. Put them in a small saucepan and add 2 cups of water. Bring to a boil and let it simmer for about 10 minutes, uncovered, stirring occasionally.
Add bulgur, stir it well. Remove from the heat and cover the lid of saucepan. Wait until bulgur expands and gets soft about 10 minutes.
Chop the onion finely. In another saucepan, heat the olive oil and add onions. Sauté the onion for couple minutes and then add the pepper and tomato pastes. Stir well. Remove from the heat.
Add the onion and pepper& tomato paste mix to lentil and bulgur. Add salt and other desired spices and lemon juice. Start stirring with a spoon. And then by using your hands mix it very well.
Finally, add chopped greens, mixing gently.
Wet your hands a little. Form your lentil balls as small oval shapes.
To serve, place your lentil balls on a serving plate over the romaine lettuce leaves. You can add more lemon juice and hot pepper flakes if you like.
