Ingredients 

  • 2 cups whole wheat flour
  • ½ cup all-purpose flour
  • ⅔ cup warm water (or milk)
  • 1 tablespoon instant dry yeast
  • 1 teaspoon salt
  • 1 egg yolk
  • 2 tablespoon water
  • 1 tablespoon butter
  • Sesame seeds and nigella seeds

How to make the pide

Dissolve the yeast in warm water (or milk). Let it sit for 5 minutes. 

Put whole wheat and all-purpose flour in a large bowl. Add 1 teaspoon of salt. Mix well.

Combine the yeast mixture with the flour. Start kneading the dough. If your dough is too thick you can add some more warm water. Knead approx. for 10 minutes.

Cover the bowl with a kitchen towel and let the dough sit for about 1 hour. 

After 1 hour, preheat the oven to 450 degrees F. 

Prepare the glaze: Whisk the egg yolk, 1 tablespoon of melted butter and 2 tablespoons of water in a small bowl.  

Transfer the dough to a well-floured surface. 

Using your fingers, spread the dough into a circle shape about 1/2-inch thick. 

Cover the dough and let it rise for about 10 minutes.

Spread the glaze onto the dough. Give the traditional square patterns using your finger tips.

Top with the sesame seeds and nigella seeds. 

Transfer the dough to a floured baking sheet and put it into the oven.

Bake it until golden, about 20 minutes. Remove from the oven and cover loosely with a kitchen towel for 10 minutes before serving.
