Famous among summertime “olive oil dishes” in Turkey, we believe this easy and quick recipe will find its place on your tables this summer.
- 3 large celery roots – peeled and cubed
- 1 large potato – peeled and cubed
- 1 medium onion – diced
- 1 carrot – peeled and sliced
- 1/3 cup olive oil
- Italian parsley – chopped
- 3 oranges – juiced
- 1 lime or lemon – juiced
- Desired amount of salt
In a medium pot sauté onion in olive oil.
Add in celery root, potato, carrot, salt and stir well.
Add in freshly squeezed orange and lime juice, close the lid and let it boil.
Then reduce heat and simmer until done.
Place it on a serving plate, garnish with Italian parsley .
Serve hot or cold.
